Simply Veggie Spaghetti:
Ruth is hosting Presto Pasta Nights # 183 again this week and although I wanted to participate last week which would have been my fourth time in a row I missed it! I had a blast with a very dear friend and pasta just wasn’t on the menu. :)It’s back now!
I’ll try to make up this week with this very simple yet healthy veggieful spaghetti dish… The times I used to help myself to spaghetti at italian fast food joints, I used to feel the texture and wonder why it was under cooked or over cooked. Pasta is a gentle dish - If you don’t boil it just right, it becomes sad and makes you sad too. When I boil my pasta I usually time it or stay right by its side and make sure its done just right.
I used a ready made marinara sauce to hold the veggies together…
What you need:
Zucchini/Green pepper/Onion - sliced thin and long
Garlic - finely chopped
Marinara Sauce or any tomato based pasta sauce
Boiled and drained Spaghetti
I took a while to chop and saute the veggies in olive oil. If you like your veggies salty, add some salt while sauteing. When the veggies are well done add the sauce and bring to a boil. Add the Spaghetti and toss it around for a bit.
Add some chili flakes if you like your pasta spicy. And some carrots if you like the orange it brings in…
Mostly I’d say “just add those ingredients that make you happy”
