Going grain-free seems to have caught up with a lot of people. For this rice and sambar loving south Indian it is one of the hardest course to take. And I cannot say I’ve been a 100% grain-free either. I give in to temptation sometimes and on other days I completely stick to routine.

Given that I found something that could replace is a huge relief BUT unfortunately it just does not match up to the taste of rice. So the focus of my cooking shifted to trying and modifying Samo in different way to appeal to my tastebuds.

Pros:

  • Easy to cook
  • Very filling
  • Very versatile

Cons:

  • Expensive
  • By itself is pretty bland
  • Needs to be stored in the fridge
  • Cannot be used the next day as it tends to become hard and inedible

Okay this picture might seem a little weird but I wanted to give you an idea of how small these seeds are! They are probably 1/5th the size of a mustard seed… and when you cook them they grow a little bigger than the mustard seed which is great because you hardly need half a cup for a meal for two.

Sooooo… Don’t run away just yet. Let me explain - I did the above purely for fun, one night when I was wondering if I could make patties with cooked Samo. And I could - so it was a small victory I celebrated by going a step ahead and stuffing some curry into the patty.

Cooking directions:

Samo seeds - 1/2 Cup

Water - 2 Cups

Salt to taste(optional)

Place all the ingredients in a microwave friendly vessel and microwave for 8 minutes.

If you choose to cook instead of microwave, mix the ingredients and cook on medium high for about 15 minutes.

To make the Patties(completely optional):

After the Samo is cooked use a Tbsp and scoop it out onto a flat plate. Gently form it into a flat disc and place it on a non stick pan. It takes about 1 minute to cook on each side.

To go a step further and make it a stuffed patty(try this for fun):

The stuffing:

Heat a little oil in a pan and add finely chopped onion, beans, carrots and green pepper and cook for about 15 minutes. Add low sodium soy sauce and cook for another 5 minutes. Turn off heat and let cool.

Use this as a stuffing for the patty. If you cant do the stuffing and find it all spilling out thats okay too…
