Baking is turning out to be a blessing in disguise for me. Tasty, healthy and half the work! So less kitchen time and yet the results are uniquely tasty experiments. Works for me :)
I’ve been hesitant to buy veggies that require a lot of cleaning time and end up taking the same amount of time to cook. Veggies like Cauliflower and Carrots for example. I’ll come up with other examples later but for now enjoy this tasty treat for an evening snack.
Preparation time: 1 Hour
Baking time: 30 min
What you will need:
Carrots - 2 Cups - finely shredded
Cawliflower florets - 2 Cups - finely sliced
Peas - 1 Cup (I used frozen peas. you can fresh ones too. Or you can cook the peas in boiling water for about 3-4 minutes, strain and use)
Maida/Unbleached flour - 1 Cup
Baking powder - 1/4 Tsp (Sift the flour and baking powder 3 times and keep aside)
Salt to taste
A hint of spices. You can add paprika powder and a pinch of cinnamon powder. This is an optional step.
A dribble of Olive oil and enough to oil the baking dish.
How to bring it all together:
Preheat the oven to 350 F. Prepare your baking dish by oiling it well. Now in a mixing bowl mix in the shredded carrots, cauliflower, peas. Add the flour sifted with the baking powder and mix well. Add sufficient salt to the mixture. Add in 1/2 Cup olive oil and mix well to make a firm dough like consistency. Set this aside for about 10-15 minutes. Empty this mixture into the baking dish and bake for about 25 to 30 minutes. Use the toothpick test to make sure it’s all done. I spiced it up with some chili garlic sauce which has become a must in my pantry.
